F&N NutriWell Water Chestnut and Sugar Cane

Ingredients

  • 120g of butter
  • ⅔ cup (160g) of caster sugar
  • 1½ cup (185g) of self-raising flour
  • ½cup (125ml) of F&N NutriWell Water Chestnut and Sugar Cane
  • 2 tsp of vanilla sauce
  • 2 eggs
  • 6 tbsp (approx. 8) of water chestnuts, washed and peeled

Dice the water chestnuts into fine pieces.

Preheat the oven to moderate 180°C. Line a deep 12-hole shallow patty tin with paper cases.

Place the butter, sugar, flour, vanilla, F&N NutriWell Water Chestnut and Sugar Cane and eggs in a bowl.

Beat with electric beaters on low speed for 2 minutes, or until well mixed.

Increase the speed and beat the mixture for another 2 minutes, or until smooth and pale.

Stir in the water chestnuts. Divide among the cases and bake for 20 minutes, or until golden.

Transfer to a wire rack to cool.

Tips

  • Avoid dicing water chestnuts into extremely fine pieces to maintain its crunch.
